We ate the first loaf I made a few weeks ago. This is a second loaf which I baked as a little gift for some friends whom we were meeting for a walk in Richmond Park. (You can see some photos of our walk on my other blog, here.)
Spiced Banana Loaf
8 oz self raising flour
4 oz butter
4 oz sugar
2 eggs
2 tbsp honey
4 bananas (ripe)
The grated rind of 1 lemon
grated nutmeg
1/4 tsp salt
1/4 tsp ground cinnamon
2 tsp ground ginger
I sieved the flour into a bowl and added the salt.
I rubbed in the butter.
I then added the spices, the sugar, and the lemon, followed by the bananas, eggs and honey.
I mixed the ingredients together and put them into a lined loaf tin.
I baked until the loaf was firm (test with a cocktail stick) at 180 degrees.
I've just realised, looking at the photographs, that I forgot to tell my friend that the honey I used in the loaf, actually is Richmond Park Honey, which I purchase from the Ham Pantry, which you can find on Ham Parade, just beside Ham Common in Richmond!

I LOVE anything baked that is spiced and this looks fabulous. I have a couple of spotty bananas lurking in the back, so I may need to make this Jude!

Looks gorgeous! I love banana breads with a twist like your spices - will definitely give this a bash when I have some funky looking bananas!

ReplyDeleteThis sounds really lovely, I think the spices and slightly less sweetening will make it more appealing than the usual banana bread which is too sweet for me. So looking for very ripe bananas now...
